PREPARATION:
To prepare ‘Moin Moin’ (Savoury Bean Cakes), boil 1½ cups of peeled beans for 3 minutes, then set aside for 2 - 4hours and leave to soak. Drain the beans, rinse them and then blend the beans with ½ cup of stock or water, 1 red bell and 1 scotch bonnet pepper, and 1 chopped onion, in a blender. In a separate bowl, season and mix together blended beans with salt, 2 stock cubes and 1tbsp of chipotle powder and Italian seasoning. Stir in 3tbsp of melted butter. Add and gently fold in 3 sliced boiled eggs and ½ cup of corned beef chunks (optional). Spray baking tins with cooking spray / oil and pour mixture into tins and cover with foil. Bake on middle rack at 180°C for 20-30 minutes, or until toothpick comes out clean. Remove from the oven and leave to cool.
